Rainbow Honey Lime Fruit Salad

This is a no fail side that is super easy to make and put together, but tastes oh so delicious. This incredibly refreshing blend of fruit has a tangy honey-lime dressing poured on top to create this fantastic side.

Besides the obvious of being refreshingly good, it is also is so versatile! You can add a variety of fruit, or anything you have on hand at the moment!

A yummy rainbow blend of fruit mixed with a delicious honey and lime dressing. Perfect for your family gathering!

Ingredients

  • 1 lb fresh strawberries, chopped
  • 1 lb chopped fresh pineapple
  • 12 oz fresh blueberries
  • 12 oz red grapes, sliced into halves
  • 4 kiwis, peeled and chopped
  • 3 mandarin oranges
  • Honey Lime Dressing
  • 1/4 cup honey
  • 2 tsp lime zest (zest of 2 medium limes)
  • 1 1/2 Tbsp fresh lime juice

Instructions

Add all fruit to a large mixing bowl.

In a small mixing bowl, whisk together they honey, lime zest and lime juice.

Pour over fruit and toss to evenly coat, serve immediately.

Notes

1. Feel free to add more fruit to the salad. Bananas and mangos would be a great option! --- 2. This salad can last up to 3 days in the fridge. --- 3. Canned mandarin oranges in juice or light syrup, drained well will work here too as well as canned pineapple chunks --- 4. Fruit can be chopped 1 day in advance and dressing can be made 1 day in advance and kept separate and chilled, toss together just before serving. --- 5. Make sure to use ripened fruit. If buying fresh, plan ahead accordingly to give your fruit time to soften.
