Little back story to why I love butter shortbread cookies so much. My dad served a 2 year LDS mission back in the 80’s in Ireland. I grew up listening to stories of his time there, and looking at picture slides in those old time photo slide projectors. It brought me joy to spend time listening to his memories. One of the treats from Ireland, that we would often have in our home was shortbread cookies. And every Christmas to this day, my dad requests a package of Walkers shortbread cookies. One year we got him an off brand package and he was ticked!
In sixth grade I did a country report on Ireland and we were required to bring a treat. And of course we made these. To this day, they are still one of my favorite cookies to eat, along with our oatmeal chocolate chip cookies, and I love that they are so easy to make. It only has five ingredients: butter, flour, salt, vanilla, and sugar. You basically dump all the ingredients in a bowl, mix all the ingredients together, and press into a sheet pan to bake. Or in our case for the holidays, we rolled out the dough and made cute little star cookies!
So not only is this a family recipe with many years of good memories to back it up, they are so delicious as well. Buttery and flakey are all you need in life am I right? You could even if you wanted spread a layer of chocolate ganache on the top! Ooooo I think I might do that next time! And I love how easy they are to make. If you are looking for a last minute treat to bring to the festivities for the 4th of July, make these! You are bound to have the only 4 ingredients needed in your pantry and fridge.

Buttery Shortbread Cookies
Buttery and flakey shortbread cookies are so simple to make and a perfect tasty treat. Only 4 ingredients but oh so delicious!
Ingredients
- 1 cup butter, softened
- 3/4 cup powdered sugar
- 1/2 tsp salt
- 1 tsp vanilla
- 1 3/4 cup flour
Instructions
Preheat your oven to 325°.
In a large bowl, mix together softened butter, sugar, salt and vanilla until smooth.
Gradually add flour to batter and mix until well combined. Dough should be crumbly but able to form together when pressed.
Press dough into a sheet pan, or roll out with rolling pin and use a cookie cutter to shape your cookies. Place on a greased sheet pan.
Bake cookies for 12-13 minutes or until bottom of the cookies are golden.
Pull off and set on a rack to cook. Enjoy!
