We love Avocados here in the Ragar home, especially when it is put in a yummy dip that we can scoop up with a nice tortilla chip. We got invited to a friends home to celebrate the New years and were asked to bring a side to share. I immediately knew I wanted to do something with avocados, mostly because at the moment I was craving them (:}).
Other then the incredible flavors mixed all together with the avocados, it is so easy and quick to put together. And most the time all of the ingredients are things that you have on hand! Well, for us at least! Our fridge always has a small bunch of cilantro and a few cans of black beans in the pantry ready to be used.
And obviously, this is a great healthy option to take as a party snack, or even scoop on top of some grilled chicken or Salmon. Yum! Take this to your next get together and impress all your friends and family with this tasty Cowboy Caviar!
Cowboy Caviar
This is a great healthy option to take as a party snack! Yummy avocado chunks and a tangy Italian dressing make this a perfect snack or topping to your meal!
Ingredients
- 15 oz can black beans rinsed and drained
- 15 oz can pinto beans rinsed and drained
- 15 oz can sweet corn drained
- 5 Roma tomatoes diced
- 1 avocado diced
- 1/2 cup purple onion chopped
- 1/2 cup chopped cilantro
- 1/2 cup zesty Italian dressing
- 1 tbsp lime juice
Instructions
Pour all of the ingredients into a large bowl and stir until combined.
Cover the bowl and place in the fridge.
Allow the flavors to blend for about 1 hour before serving.
Serve with chips, side, or topping on chicken or fish.
Notes
1. If you don't have or prefer pinto or black beans, you are welcome to substitute any type of beans you do prefer. This recipe is very versatile! --- 2. Feel free to add other vegetables to the dip as well. Bell peppers would be a great addition! Or maybe some fresh pineapple or mango to switch it up a bit! --- 3. The longer you let the ingredients marinade together in the fridge the better the flavor! This dip will last a few days in the fridge as well. --- 4. I normally don't have canned corn on hand, but always have a bag of frozen corn. This is fine to use as long as it is thawed out before using. --- 5. This recipe is already pretty dang healthy, but feel free to use a lighter Italian dressing if desired.
