Okay but in all seriousness…this rice is bomb. It is crazy easy to make and uses things that you have (well should) on hand. Who knew that a little can of coconut milk could amp up the flavor of regular old rice and make your so so dinner into a dinner fit for the Gods!

We love adding this rice as a side to all types of chicken, steak, and under sautéed meat like our Quick and Easy Korean Beef or Grilled Hawaiian chicken. It really is so easy to make and full of flavor. So next time you want to make some rice for your meal, grab some salt and a can of coconut milk and follow this recipe to get the best rice ever!

Ingredients

  • 1 cup canned coconut milk
  • 1 cup water
  • 1 cup Jasmine or Basmati rice
  • 1/4 tsp salt

Rice Cooker instructions:

Place 1 cup of rice in rice cooker bowl. With cold water, rinse the rice 2-3 times and drain the starchy water both times. This will help the rice to not stick to each other.

Add 1 cup of water back into the rice, and then add the coconut milk and salt. Stir to combine.

Press the white rice option and let it cook.

Once done, fluff the rice to prevent burning on the bottom.

Serve immediately after cooking.

Stove pot instructions:

Place 1 cup of rice in the pot. With cold water, rinse the rice 2-3 times and drain the starchy water both times. This will help the rice to not stick to each other.

Add 1 cup of water back into the rice, and then add the coconut milk and salt. Stir to combine.

Cover the pot with a lid, and bring to a boil on high heat.

Once at a boil, turn heat down to low and let it simmer for 10 minutes. Do not take the top off.

Take off the heat and let it sit for another 10 minutes. Once again, do not take the top off.

Take the top off once 10 minutes is up, and fluff the right to prevent burning on the bottom.

Serve immediately after cooking. Enjoy!

Notes

1. It is very important to use jasmine or basmati rice. Long grain rice doesn't work as well with this recipe. --- 2. Also important to wash your rice before preparing and cooking it. Washing the rice gets rid of the extra starches on it, which in turn helps your rice to not stick to each other. The clearer the water after rinsing the better. --- 3. If looking to make the rice a little healthier, feel free to use coconut milk with less fat. The rice will taste just as good! --- 4. Great as leftovers. Just store in an air tight container and in the fridge. Use within 3-5 days.
