In our home we have a small folder worth of our favorite recipes that we can turn to time and time again, knowing that we are going to enjoy eating it. It has taken years and years to beef up this folder worth of recipes, and this is one of those recipes. The holy grail of dump in a pot dinners is the oh so delicious Hawaiian Haystacks!
Some people also will call this recipe Chinese Haystacks, and to be honest I am not sure where it originated. However, it is tasty regardless of where it came from. I can eat this breakfast, lunch, and still be happy to eat it by the time dinner rolls around!
I must let you know, that regardless of it using cream of chicken soup, we have over time added more spices to the gravy to heighten the flavor, and most importantly (please please please take note!) we use rotisserie chicken. I can’t tell you enough how much a difference the taste is with that juicy fall of the bone chicken from the grocery store! It makes all the difference in these Hawaiian haystacks!
As far as toppings, this is simply a list of toppings that me and my family enjoy on our haystacks. On mine I personally love: cheese, sliced almonds, chow mien noodles, green onions, a little bit of tomato, and then a heaping pile of pineapple! And of course make sure to lather your gravy over a nice bed of fluffy white or brown rice. Remember though, everyone is a little different so having a variety of toppings is always a good idea!
- Chow Mein Noodles
- Bacon Bits
- Green Onions (chopped)
- Sliced Almonds
- Celery (chopped)
- Tomatoes (diced)
- Craisins
- Pineapple tidbits or chunks
- Shredded Cheddar Cheese
- Olives
- Coconut Flakes
- Red Bell Peppers (chopped)
- Mandarin Oranges (canned)
- Cashews

Easy Hawaiian Haystacks
A easy weeknight dump in the pot dinner that is delicious and sure to please everyone at the table. Served with your favorite toppings and over a bed of fluffy white rice!
Ingredients
- 2 cups chopped rotisserie chicken
- 2 cups sour cream
- 2 cans of cream of chicken soup
- 1/2 cup milk
- 1/2 tsp Italian dressing mix
- 1 tsp garlic salt
- Salt and Pepper to taste
- 4 cups cooked rice
Instructions
In sauce pan add chicken, sour cream, spices, cream of chicken soup and milk. Heat and stir in saucepan over medium heat until mixture is heated evenly throughout.
Serve over rice.
Top it with all your favorite toppings.
Notes
1. Great meal for leftovers. Can sit in the fridge for a few days after serving. --- 2. You can choose to use your own cooked chicken if you want too. We just enjoy the flavor of the rotisserie chicken in the gravy sauce. --- 3. If making for a large crowd, make as instructed above and then throw into a crockpot to transport and to keep the sauce warm. --- 4. The Italian dressing mix can be found in the dressing section of your local grocery store. It can be bought in small individual packets. --- 5. We love using instant white rice because it can be quickly made. But if you want to cook rice the regular way, Jasmine rice is a great option.
