Easy Homemade Soft Pretzel Bites

This is one of the easiest recipes to make homemade soft pretzels and dare we say, better then Auntie Annie! Yes, we just went there!

But listen, the dough only needs 10 min resting time, no rising time, before cooking in a baking soda boil bath and then into the oven to crisp up! You can easly eat five, or eight, or twenty of these because they are that good. And even if you have zero skill in the kitchen, you can make these super simple pretzel bites.

Easy way to prepare delicious soft pretzel bites. Get ready to eat these all within minutes!

Ingredients

  • 1 1/2 cup warm water
  • 2 1/4 tsp of dry or instant yeast
  • 1 tsp salt
  • 1 Tbls brown sugar
  • 1 Tbls unsalted butter
  • 3 3/4 cups all-purpose flour, plus more for work surface
  • Course sea salt for sprinkling
  • 1/2 cup baking soda
  • 9 cups water

Instructions

Whisk the yeast into warm water. Allow to sit for 1 minute. Whisk in salt, brown sugar, and melted butter. Slowly add 3 cups of flour, 1 cup at a time. Mix until dough is thick. Add 3/4 cup more flour until the dough is no longer sticky. If it is still sticky, add 1/4-1/2 cup more, as needed. Poke the dough with your finger, if it bounces back, it is ready to knead.

Turn the dough out onto a floured surface. Knead the dough for 3 minutes and shape into a ball. Cover lightly with a towel and allow to rest for 10 minutes. Meanwhile mix the water and baking soda together and turn up to boil.

Preheat oven to 400°F. Line 2 baking sheets with parchment paper or silicone baking mats. Set aside.

Separate dough into 1/3 cup sections. Roll the dough into a 20-22 inch rope. Take a sharp knife or pizza cutter and cut the rope into 1 1/2 inch pieces.

Bring baking soda and 9 cups or water to a boil in a large pot. Drop 5-10 bites into the boiling water for 20 seconds. Any more than that and your pretzels will have metallic taste. Using a slotted spatula, lift the pretzels out of the water and let the excess water drip off. Place the bites onto the prepared baking sheet. Sprinkle each with the sea salt. Repeat with remaining pretzels.

Bake for 12-15 minutes or until golden brown.

Remove from the oven and serve warm. Pretzels may be stored in an airtight container or zipped top bag for up to 3 days.

Notes

1. Pretzels freeze well, up to 2 months. --- 2. To reheat, bake frozen pretzels at 350°F for 20 minutes or until warmed through or microwave until warm. --- 3. The Prepared pretzel dough can be refrigerated for up to one day or frozen in an airtight container for 2-3 months. Thaw frozen dough in the refrigerator overnight. Refrigerated dough can be shaped into pretzels while still cold, but allow some extra time for the pretzels to puff up before the baking soda bath and baking.
