Grain Free granola

If you know me, you know that I love love love granola. Especially homemade granola. My mother in law made this homemade granola recipe for my family while visiting Arizona a few years back and has since become my favorite homemade granola recipe. Put some granola in a bowl with a cold glass of milk, nothing is better in my opinion!

But I am always up to trying out new things, and my Mom was visiting us for the weekend and introduced us to this new recipe. I was a little skeptical at first, but we were pleasantly surprised at how much we loved this grain free granola! My mom has a knack for finding great recipes that are healthy and gluten free and she is such a great baker! I learned all of my baking skills from her growing up, and is one of my favorite past times to look back on 🙂

So thank you Mom for making this granola for us! This yummy goodness has an assortment of nuts including pumpkin seeds, and is cooked with real maple syrup and coconut oil. My favorite part of the granola is though is the toasted coconut flakes! Ummm yes!

It is so good! We eat it like cereal, and even sprinkle it on yogurt or vanilla ice cream! Yum! Every time I make this as well it makes my home smell like the holidays and Christmas, and who doesn’t love that! So if you are looking for a grain free gluten free granola option, here ya go! This yummy goodness has an assortment of nuts including pumpkin seeds, and is cooked with real maple syrup and coconut oil. My favorite part of the granola is though is the toasted coconut flakes! Ummm yes!

Ingredients

  • 1 1/2 cup unsweetened coconut flakes
  • 3/4 cup sliced almonds
  • 3/4 cups chopped raw pecans
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup cashews
  • 1/3 cup almond flour
  • 1 1/2 tsp cinnamon
  • Pinch of salt
  • 4 TBLS real maple syrup
  • 1 TBLS coconut oil
  • 1 tsp vanilla

Instructions

Preheat oven to 300°

Line a sheet pan with parchment paper or non slip cooking mat, then set aside.

Combine all ingredients in a large microwavable bowl and mix together.

Place in microwave for 1-2 minutes to melt the syrup and coconut oil.

Stir and mix all ingredients until all combined.

Pour the granola mixture onto the prepared sheet pan and spread mixture out evenly.

Bake granola for 15-20 minutes or until the almond slices and coconut chips are golden brown stirring twice to prevent burning. Granola will continue to crisp when pulled out.

Serve once cooled.

Notes

1. This recipe is versatile. Add a variety of nuts and oats if desired. --- 2. Put on top of ice cream or yogurt for a yummy treat! Add a drizzle of honey too for added sweetness! --- 3. This recipe calls for cinnamon but feel free to add nutmeg and pumpkin pie spice for more flavor!
