Ground Turkey Sweet Potato Skillet

This skillet dinner not only is super easy to make, but is a great healthy option if you are looking to eat something tasty and low carb at the same time. With the new year starting both Joel and I have the goal of improving our lifestyles mentally and physically. Physically by eating healthier and living a more active lifestyle.

In addition to this goal, I am trying to stay off gluten as much as I can. So as dinner time rolled in closer, I knew I needed to stick to something healthier, and gluten free if possible.

With a handful of sweet potatoes and a pound of ground turkey in the fridge, I looked on pinterest to find a recipe I could whip up with these ingredients. Thankfully I quickly found this recipe and thought it looked delicious and worth a try. And I glad we gave it a try because it was oh so good! Even my kids gobbled it up and they are not big fans of any type of potato!

This gluten-free and low-fat Ground Turkey Sweet Potato Skillet will be ready to dig into in less than an hour. It's a perfect one-pan meal for your family to enjoy and is so flavorful!

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 pound extra-lean ground turkey
  • 1 teaspoon garlic clove, minced
  • 1 cup onions, diced
  • 2 sweet potatoes, diced
  • Salt and freshly ground black pepper to taste
  • A pinch of red chili flakes
  • 1/2 teaspoon garlic powder
  • 1 cup shredded mozzarella cheese
  • Fresh parsley, for garnishing

Instructions

In a cast iron skillet, heat the olive oil over medium-high heat.

Add the ground turkey and garlic. Use a wooden spoon to break up the turkey as it cooks. Stir occasionally, and cook for about 5 minutes.

Add the sweet potato, onions, red chili flakes, salt, and pepper.

Add 1/2 cup of water to help cook the sweet potatoes.

Cover the skillet with a lid, turn heat to low, and cook until the sweet potatoes are tender. Don’t forget to stir occasionally. If necessary, add more olive oil or more water to cook the sweet potatoes faster.

When the sweet potatoes are tender, add the shredded mozzarella cheese and let it melt on top.

When the cheese melts, serve, and garnish with parsley.

Notes

1. If you want the cheese on top to be a bit more crispy, through the skillet into the oven and broil for a few minutes. --- 2. You are welcome to add more vegetables to the skillet. Yellow bell peppers, broccoli, or spinach would be great options to add! --- 3. The leaner the ground turkey, the less oily it will be. Also the leaner the turkey, the healthier it will be. --- 4. Serve this dish with a nice side of vegetables or green salad. --- 5. You can add other spices that you have in your kitchen to make this recipe even more flavorful. According to some readers’ reviews, this recipe is also good with cumin, curry, paprika, sage, chili powder, onion powder, thyme, rosemary, and hot sauce.
