Homemade Vanilla Custard Ice Cream

We love ice cream almost as much as we love carne tacos. Notice the ALMOST in that sentence. But it does come as a close second. We just got our Cuisinart Ice Cream Maker for this past Christmas, and we try to pull it out as much as possible to make a sweet treat. And this homemade vanilla custard ice cream is a recipe we like to make! It is super thick and creamy, with a wonderful vanilla taste.

Our favorite thing to add on top of the ice cream is some type of cookie crumble. Oreo happens to be our favorite so whenever we are making ice cream, we make sure to always have a sleeve of those ready. Any other toppings like fruit and nuts would also be fantastic. My personal favorite combo is oreos and strawberries! Try it sometime! The sweetness of the strawberries, the crunch or the oreo, and creaminess of the custard is such a bomb combination!

Now because this is a custard base ice cream, it does take a little more time to put together then just your typical ice cream base. What makes a custard ice cream is the eggs in the recipe. You cook the eggs, cream, half and half, sugar, and salt in a sauce pan to heat up and incorporate. Then you have to cool down completely to room temp before adding to your ice cream maker. Once the ice cream has been churned, your pour the custard into a container, and then let it harden in the freezer for another few hours.

But don’t let this scare you off because when you take your first bite of this vanilla custard ice cream, it is all worth it! It is so delicious and so unique compared to your typical frozen ice cream. It is more creamy and less icy which is why we love it so much! So go get fooding and make this custard ice cream! Perfectly Creamy and thick homemade vanilla custard ice cream. Old-fashioned style ice cream that tastes so good with or without toppings! Yum!

Ingredients

  • 1 tbsp vanilla extract
  • 4-5 egg yolks
  • ¾ cup white sugar
  • 1/4 tsp salt
  • 2 cups half and half
  • 1 cup whipping cream

Instructions

Follow instructions for your ice cream maker for preparation before making your ice cream.

In a sauce pan over medium heat, whisk together egg yolks, sugar, and salt until well combined.

Add in half and half and whipping cream and whisk together. Should be constantly whisking to prevent the eggs from cooking.

Heat up the mixture to a temperature of 165°-170° with a thermometer. If you don't have a thermometer, heat up the mixture until it starts to let off steam.

Remove from heat and place the mixture in a glass bowl.

In another bowl, fill up with ice and water to create an ice bath. Place the bowl with the custard on top off the ice bath to cool down to room temp.

Once the mixture is at room temp, pour the custard into your ice cream maker to churn.

The mixture should churn for about 30 minutes.

The custard should have the consistency of soft serve.

Pour the custard into a loaf pan or ice cream container, and cover with a top or plastic wrap.

Let the mixture freeze for at least 3 hours. Pull out and serve. Enjoy!

Notes

1. If you want a less creamy custard, use less egg yolks. Also, using whole milk instead of half and half will make a more icy custard. --- 2. This is a great base ice cream for toppings. We love oreos, strawberries, nuts, chocolate and caramel sauce, etc. --- 3. The recipe requires patience. The longer you wait the better the ice cream gets!
