Summer is upon us, which means it is time to pull out the grill and smoker and crank the heat up! We love grilling up a yummy some yummy steak for our Authentic Carne Asada Tacos, or our smoked ribs in the Traeger! Sometimes, we are in the mood for some yummy grilled fish and this honey glazed salmon with Mango Avocado Salsa hits the spot every time!

The salmon, which we buy fresh from the meat section of our local grocery store (preferably not frozen), has a yummy honey glaze brushed on top, and then is grilled to perfection. Once it is done, we top that baby with some fresh mango avocado salsa which really livens up the flavor! It tastes so incredibly fresh on top of the salmon. Then on a beautiful embossed white plate we serve the honey glazed salmon with a side of our easy coconut rice and it is bomb!

The best part is this meal takes 30-40 minutes from start to finish! So it is easy enough for a weeknight meal, but fancy enough to impress all of your family and friends. There are a few variations as well to this, like for example, what if you don’t have a grill? Well don’t worry! This salmon cooks great in the oven! Great to cook during those winter months when you don’t want to walk out into the cold! Same goes for the salsa. We love adding pineapple sometimes to ours!

Regardless of how you cook the salmon, this recipe is a keeper and will have you coming back for seconds! A perfect summer night meal to make everyone happy! Perfectly grilled salmon with fresh mango avocado salsa will blow your socks off!

Ingredients

  • Grilled Salmon
  • Olive oil
  • Salted butter
  • 3-4lb salmon
  • 4 TBLS lime juice
  • 1/2 cup honey
  • 1/2 tsp chili powder
  • 1 tsp garlic salt
  • 1 tsp sea salt
  • 1/2 tsp pepper
  • Avocado-Mango Salsa
  • 3 large mango, peeled and diced
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 2/3 cup chopped red onion, rinsed under water and drained
  • 2 large avocado, peeled and diced
  • 1 Tbsp fresh lime juice
  • 1 Tbsp olive oil
  • Salt and pepper, to taste

Instructions

Pull out a large piece of tin foil, big enough that it fold completely over the salmon when grilled.

Brush olive oil on the bottom of the salmon (skin side) to prevent sticking on the tin foil.

Place the salmon skin side down (side with olive oil) on to the tin foil.

In a small bowl, whisk together the lime juice, honey, chili powder, garlic salt, sea salt and pepper until well combined.

Brush marinade over the top of the salmon generously.

Then over the salmon, put slices or pads of butter all over the top.

Fold up the salmon in the tin foil and place on the grill.

Grill for up to 35 minutes on medium to high heat, or until the salmon is flakey and cooked all the way through.

While cooking the salmon, prepare the mango salsa by adding all ingredients in a bowl and mix lightly together.

Pull salmon off and serve with a nice scoop of salsa over the top. Enjoy!

Notes

1. You are welcome to use salmon fillets instead of one large piece of salmon. If each fillet is about 6 ounces, and our piece of salmon was 64 ounces, so make sure to figure out if you only need half of the marinade and salsa. --- 2. After you’ve sliced the red onion for the mango avocado salsa, rinse it under cold water to lessen its bite. --- 3. Make sure your mangos are ripe before dicing them. You don’t want hard, flavorless mango chunks in your salsa! --- 4.If you bake the salmon, bake in a preheated 400 degree F oven for 12 – 15 minutes or until cooked all the way through and flakey. --- 5. Make sure to not eat the skin. It won't hurt you but, sometimes the skin can still contains bones so be careful!
