Honey Tomatillo Salsa Chicken

We love a good crockpot dish, and this one is definitely a keeper. This honey tomatillo salsa chicken is super flavorful and so incredibly easy to make. You just put all the ingredients in the pot, cook on low for 6-7 hours, and then serve on up. We served our chicken in our homemade tortillas, a little sour cream dollop, and some freshly chopped lettuce. It was the perfect weeknight dinner.

We also had a whole dinners worth the next day, and there is nothing more than I love than leftovers for the next night. Don’t get me wrong, I love cooking and baking, and we do it quiet often. But sometimes when you have had a long and busy day, it is nice not to have to worry about what you are going to make for dinner. So the fact that you don’t have to do too much in the first place to make this yummy dish and you get leftovers is a win win in my book!

But let’s talk flavors shall we! We had a cup left over of our homemade tomatillo salsa, which is incredible by the way, and I wanted to use it up. So, with a little honey, salsa, and a few spices, I dumped all the ingredients over some chicken and let it do its thing in the crockpot all day. It shredded perfectly as well, and had the perfect amount of sweetness and savory in every bite of chicken.

My husband and kids loved making burritos out of the shredded chicken, and for myself I went for the healthier option and did lettuce wraps! So good! Anyway, long story short, this dish is so good! This honey tomatillo salsa chicken is super flavorful and so incredibly easy to make. Every bite of chicken has the perfect amount of sweetness and savory flavors! A perfect weeknight dinner!

Ingredients

  • 2 pounds boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 cup tomatillo salsa (aka salsa verde)
  • 1/2 cup honey
  • 1/2 cup orange juice
  • 1 1/2 teaspoons chili powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • Toppings: sour cream, guacamole, lettuce, pico de gallo, etc.

Instructions

Place chicken in the bottom of your slow cooker.

Add all of the remaining ingredients on top of your chicken.

Cook on high for 2-4 hours or on low for 6-7 hours or until chicken is tender enough to shred.

Remove chicken to a cutting board, and let rest 5 minutes before shredding (there will be a lot of liquid remaining).

Return shredded chicken and let cook on low for an additional 30 minutes to absorb some of the liquid/juices.

Stuff taco shells or tortillas with chicken and top with desired taco toppings.

Notes

1. If you want this to be a more savory or spicy dish, do 1/3 cup of honey, and add hot sauce to taste. If you want less spicy, do half the amount of tomatillo salsa. --- 2. We like using chicken thighs in our home so that is what we used and it shredded perfectly. Chicken breast will do the same as well. --- 3. This dish can be saved in the fridge for up to 4 days after cooking. --- 4. We like this dish sweet, which is why we use orange juice. Any other citrus will do great in this dish too like lime or lemon juice. --- 5. It is important to let the shredded chicken, after putting it back into the juices, cook for another 30 minutes. This will allow the shredded chicken to soak up all the juices and will be more flavorful. --- 6. Other great toppings would include more tomatillo salsa, cotija cheese, chopped pineapple, or rice.
