Marinated Shrimp Fajitas

This is one of the easiest, and most delicious recipes we have ever made! You literally just dump all of the ingredients on one pan, bake it, and then dig in! These marinated shrimp fajitas taste just like they came from your favorite restaurant, they are that good!

These shrimp and veggies only need a few spices and other ingredients to make them super tasty and wonderfully marinated. Then you put them in the fridge for a few hours to soak up all the yummy flavors, and then it is ready to go! And the best part of it all, was that my kids gobbled these fajitas up too! And lets not talk about my hubby, I couldn’t keep him away from the pan!

I am so glad that we had a bag of shrimp in the freezer and some bell peppers begging to be used in the fridge because we ended up having one of the tastiest dinners we have ever had! No lie!

We don’t eat fish enough in our household, which we plan to change up, so the fact that this recipe was such a success is a major win! So, if you need to whip something up quick, but want it to be delicious, follow this recipe and let the shrimp and flavors do the talking!

Marinated Shrimp Fajitas

Ingredients

  • 1 1/2 lb shrimp, peeled and deveined
  • 1 yellow bell pepper, sliced thin
  • 1 red bell pepper, sliced thin
  • 1 orange bell pepper, sliced thin
  • 1 small yellow onion, sliced thin
  • 2 TBLS olive oil
  • 2 cloves garlic, minced
  • 1 1/5 tsp Kosher salt
  • 1 tsp pepper
  • 2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Juice of 1 lime
  • 1/4 cup cilantro, chopped
  • Tortillas, warm
  • Sour Cream, for topping, optional
  • Guacamole, for topping, optional

Instructions

In a large bowl, combine all ingredients all mix together well.

Cover, and place in the fridge to marinate. The longer the better.

Preheat oven to 450°

Spread shrimp and veggies on a lined baking sheet and cook for 10 minutes in a 450° oven.

Then turn on broiler and broil for 5 minutes, or until slightly browned or crispy.

Pull out of oven, and top with fresh squeezed lime juice and chopped cilantro.

Serve in warm tortillas, and top with desired toppings like sour cream and guacamole. Enjoy!

Notes

1. The longer you marinate the shrimp and veggies, the better the flavor! However, if you are in a pinch for time, you can skip the marinating and go straight to cooking them. --- 2. We used frozen shrimp, which we thawed out before mixing with the veggies and spices. Frozen or fresh works great! Also, any size shrimp will work too --- 3. Optional toppings for your fajitas: Guacamole or sliced avacados, sour cream, cotija cheese, cilantro, fresh lime juice, etc. --- 4. If you don't like shrimp or are allergic to shell fish, chicken tastes amazing with this marinade as well! --- 5. If you don't have fresh limes, feel free to use lime juice from a container!
