Overnight Sweet Berry Casserole

As you can tell by the overnight in the title, you make this recipe all the night before, let it sit in the fridge while you sleep, and then you pull it out in the morning to cook, and bam! You have an incredible breakfast fit for a king!

It is so simple to make as well and comes together quickly. A yummy cream cheese sweet sauce it poured over a bed of artisan bread chunks and a 3 berry mix, and then the bread soaks up all that yummy goodness overnight, making it super tasty and oh so good.

Might I mentioned too, that we added our Homemade Buttermilk Syrup on top of these babies and oh my goodness, did it take this meal up another level. The syrup perfectly complemented the sweetness of the berries and crispy outer edges of the bread. We had extended family over at the time we made this, and everyone was raving on how good it was.

A yummy cream cheese sweet sauce is poured over a bed of artisan bread chunks and a 3 berry mix to soak overnight, and then baked to perfection in the morning. A perfect breakfast dish!

Ingredients

  • 1 loaf artisan crusty bread, cut into 1 inch chunks
  • 2 cup fresh or frozen berries
  • 2 (8 ounce) package cream cheese, softened
  • 1 1/3 cups sugar
  • 4 eggs
  • 2 teaspoon vanilla
  • 1 1/2 cups milk

Instructions

Cut artisan loaf into 1 inch chunks. Save several pieces to put on top at the end. Layer chunks evenly in a 9x13 pan.

Sprinkle berries evenly over croissants. If using frozen, let them thaw out for 30 minutes before using.

Beat cream cheese for 30 seconds with electric mixer. Gradually add in sugar, eggs, vanilla, and milk. Continue to mix until well blended.

Pour cream cheese mixture over croissants and berries. Make sure everything is well incorporated, then add saved loaf pieces on top spread out, pressing in slightly.

Cover, and put in the fridge overnight.

Preheat oven to 350°

Bake for 40-45 minutes or until golden brown and set in center.

Serve warm with powdered sugar sprinkled, and syrup. Enjoy!

Notes

1. We used artisan loaf bread in this recipe, but any other bread option would work. Croissants, french bread, brioche bread, etc. --- 2. Use full fat cream cheese and preferably milk as well for this recipe. --- 3. If you don't have time for overnight, or you forgot, let the casserole at least sit for 30 minutes before cooking. The longer it sits, the better the bread will soak up the sauce and will be more flavorful. --- 4. We use frozen berries for this recipe because it is usually what we have on hand. Just make sure to let it thaw out a bit before using. --- 5. You can half the recipe easily, and put in an 8x8 or 9x9 sized pan.
