The 4th of July is coming up this weekend and we are gearing up for all of the festivities, and most importantly, what food we are going to eat! We don’t have very much family here in Utah so we are spending it with friends this year, so to bring the family aspect to the holiday, I am making this family recipe. Raspberry jello with sour cream topping. We have made this jello in my family for years and it is always a hit when brought to gatherings. I am excited to share it with you today!

This is the type of dish that when you eat it, you are flooded with all of the good family memories you remember growing up. The same thing happens whenever I make my moms banana bread with streusel topping. Insert drooling emoji here! Back on subject though, this jello was at all of the family functions and it always was a treat to get a slice. So, when I got married and finally got my hands on the recipe, I have treasured it and kept it tucked away in my recipe box. But no longer! The recipe is free and now yours to use!

This jello couldn’t be more simple to make as well, but oh so good! I get compliments on this dish every time I bring it to share because it is so unique and delicious. The base of the jello is a raspberry flavored jello, and then you mix that with a cranberry sauce and crushed pineapple in a 9×13 pyrex pan like this one. After that sets up in the refrigerator, you top that with a sour cream, cream cheese, and powder sugar topping.

And then if that isn’t enough, top it with chopped walnuts to complete this delectable side. Did I mention too that you make this all in one pan! That means no mess! But oh man, this is so good and we love bringing this to share with family and friends. I am sure you will be in this same position once you make this. You are gonna love it I promise! A family recipe, raspberry jello with sour cream topping is absolutely divine! Chunks of raspberries and pineapple, with a sour cream cheese frosting. Yum!

Ingredients

  • 1 6 ounce box Raspberry Jello
  • 2 cups boiling water
  • 1 10 ounce bag frozen raspberries
  • 1 16 ounce can crushed pineapples, drained
  • 1 14 ounce can whole berry cranberry sauce
  • 8 ounce cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup powdered sugar
  • Chopped walnuts

Instructions

In a sauce pan, boil water.

Add boiling water to 9x13 pan, and then dissolve the raspberry jello in the water.

Add the frozen raspberries, crushed pineapple and cranberry sauce to the jello and stir to combine.

Place the 9x13 pan in the fridge to let the jello set. About 1-2 hours.

Combine the cream cheese, sour cream, and powdered sugar until nice and smooth.

Spread over the top of the hardened jello.

Sprinkle over chopped walnuts if desired.

Refrigerate until ready to serve. Enjoy!

Notes

1. It is important to let the jello set up before adding the sour cream topping. The topping won't spread on top unless the setting process goes through. --- 2. While the jello is setting up in the fridge, I pull out the cream cheese to softened. An easy way to get that soft so it combines well with the sour cream. --- 3. This jello will last in the fridge up to 1 week. --- 4. If you don't have a 9x13 pan, two 8x8 pans will work great!
