This is a perfect easy, and beautiful I might add, sheet cake to bring to your next family or friend gathering. The cake is perfectly moist and the cream cheese frosting on top are a perfect combination. We also love the arrangement of various fruit on top which adds a little color, but also a burst of flavor! My favorite fruits to add are strawberries, blueberries, kiwi, and fresh raspberries if I can find a good batch at the store! But really, any variety of berry or even a tropical fruit will taste amazing!

I got this recipe from my mom and has been in my recipe box for a long time. She loves to bake more than cook, so growing up it was always about what we could bake next or what our next treat would be. I learned all of my baking skills from her, and is why I probably prefer dessert over dinner! Her Banana Bread with Streusel topping is one of my absolute favorites! You should try that recipe next after this one!

So this sour cream berry sheet cake is no exception to the rule. It is such a delicious and simple dessert that is bound to make everyone happy. You basically make the batter, pour it into a sheet pan, bake, spread the frosting, and top with fruit! So Easy! We made this for Memorial day this year too and it looked so beautiful with the red white and blue colors. Perfect for celebrating the holidays! And lets not even get into how good the cream cheese frosting is! I am licking my lips just thinking about it!

A perfect easy and beautiful cake to bring to your next family or friend gathering! Perfectly moist, tasty, and beautiful at the same time! Yummy!

Ingredients

  • Dough:
  • 1 cup salted butter, 2 sticks at room temp
  • 2 cups sugar
  • 1 cup sour cream
  • 3 eggs
  • 1 tsp vanilla
  • 5 cups flour
  • 3 tsp. baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • Cream Cheese Frosting:
  • 8 oz cream cheese, room temp
  • 3 cups powdered sugar
  • 3 TBLS milk
  • 1/2 tsp vanilla
  • 3 TBLS butter, room temp

Instructions

Preheat oven to 350°

Cream together butter, sugar and eggs.

Add sour cream and vanilla and mix together til smooth.

Add in rest of the dry ingredients and mix together until well incorporated.

Pour batter into a greased jelly pan. Bake for 10 minutes, or until slightly golden on top and a toothpick comes out clean.

Let completely cool to room temp.

While cooling, mix together cream cheese and butter until smooth.

Add in the rest of the ingredients and beat together until smooth as well.

Spread over cooled cake.

Add Mixed berries and fruit on top if desired. Enjoy!

Notes

1. If you don't like cream cheese frosting, feel free to do a buttercream frosting instead. Just mix together 3 cups powdered sigar, 1/3 cup butter, 2 TBLS milk, and 1 TBLS vanilla, then spread on top. --- 2. Make sure butter and cream cheese in this recipe is thawed and to room temp. This will make the frosting and batter come out more smooth without chunks. --- 3. If you would like more of a sugar cookie dough consistency, chill the batter after mixing to harden. Then press down in pan. --- 4. Do not substitute sour cream. The sour cream makes the cake nice and moist. --- 5. Fruit is great on top of this cake. We like adding raspberries, blackberries, blueberries, strawberries, kiwi, mandarin oranges, mango, etc.
