Sheet Pan Kielbasa and Veggies

We love any easy weeknight dinner that is super simple to assemble, is healthy, and includes most things you would already have in your refrigerator. This recipe is basically a dump and cook dinner on a sheet pan, and that is why we love it so much. Not to mention, pork kielbasa is one of our favorite things to add to dishes. It has such a wonderful flavor!

This sheet pan kielbasa and veggies has broccoli, sweet potatoes, onions, and really any other vegetable you would like to add, or need to use up! In my case, it usually is broccoli that I need to quickly use it. Good thing we love it so much in our household though! Broccoli is my kids and hubbies favorite veggie so we always have that on hand!

Then, once you dump all the veggies on the pan with the sliced up kielbasa, you sprinkle on a few spices and olive oil, and this bad boy is ready to be cooked up. Which, I might add, is quick as well! You just cook until the sweet potatoes are soft which is about 20 minutes, and the bam! You have a sheet pan dinner that will have even your kids asking for seconds! We seriously love sheet pan dinners and our marinated shrimp fajitas are no exception! Try out this recipe next!

This healthy recipe is basically a dump and cook dinner on a sheet pan, and that is why we love it so much! Just add all the veggies you like, some pork kielbasa and bam! Weeknight dinner is served!

Ingredients

  • 1 package pork kielbasa, sliced
  • 1 large sweet potato, chopped into small chunks
  • 2 heads of broccoli, chopped into chunks
  • I medium yellow onion, chopped into chunks
  • 1 medium red onion, chopped into chunks
  • 3 TBLS olive oil
  • 2-3 TBLS Ranch seasoning
  • 1 tsp paprika
  • 1 tsp garlic salt
  • Rosemary sprigs, optional

Instructions

Preheat oven to 400°

Place all chopped veggies and kielbasa on a large sheet pan.

Pour olive oil over veggies, and then sprinkle seasoning over the top. Add more ranch seasoning to taste if wanted.

Mix well together until all the spices are incorporated over veggies and kielbasa.

Place on rosemary sprigs, optional.

Cook in the oven for 20 minutes, or until the sweet potatoes are fully cooked.

Pull out and serve immediately. Enjoy!

Notes

1. If you don't like pork kielbasa, you can choose another type of sliceable sausage. Chicken apple sausage would be wonderful! --- 2. If you don't prefer sweet potatoes, any ol' potato will work too! --- 3. Dump any type of vegetable you would like. Other optional veggies would be asparagus, bell peppers, cauliflower, butternut squash, etc. --- 4. All spices are to taste. These are the measurements we like, but you can do more if needed. You can also add other spices that you like. --- 5. Rosemary sprigs are mostly for look, but will also give you veggies a little extra flavor. --- 6. Along with the sweet potatoes being fully cooked, make sure that the broccoli is toasted on top.
