Skillet Rice and Beans with Kielbasa

I have nothing but such great things to say about this all in one skillet dinner. One, it is so easy to make. The whole entire meal only requires one pan to make, so it is easy clean up and less mess, and takes 30 minutes to make! Prep time for this meal is also 10 minutes so this skillet rice and beans with kielbasa dinner is perfect for a weeknight meal on the fly!

Two, the flavor is on point. The ingredients are cooked in a chicken broth base which enhances the taste of the rice, and brings out the yummy kielbasa flavor. And who thought that rice and beans mixed together in this way would taste so good!

Three, all the ingredients required are things that you most likely have around your home. In fact, because of this meal, I always make sure to have a package of kielbasa lying around in my fridge or freezer just so that when I am wanting to make this meal, or need to make something quick, that I can pull it out and be ready to go! Plus, who doesn’t usually have rice, beans, onions, etc. already in their pantry?

This is the perfect weeknight meal to make your entire family happy. This delish one pan dinner has perfectly cooked rice and beans, and crispy kielbasa to make everyones tummy happy!

Ingredients

  • 1 TBLS extra virgin olive oil
  • 1 TBLS unsalted butter
  • 14 ounce package polska kielbasa, diced
  • 1 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 1 cup Jasmine rice
  • 2 cups chicken broth
  • 14 ounce can pinto beans, rinsed and drained
  • 1/2 tsp dried Italian seasoning
  • 1/4 tsp cracked red pepper flakes
  • Salt and pepper, to taste
  • 1/4 cup finely chopped fresh parsley

Instructions

In a large nonstick skillet, heat the oil and butter over medium-high.

Add the kielbasa and onion; sauté until onions become soft and translucent (about 3 minutes), stirring occasionally.

Add in the garlic and stir for about 30 seconds.

Stir in the rice, chicken broth, beans, Italian seasoning, cracked red pepper, and a dash of salt and pepper. Bring to a boil.

Cover, reduce heat to medium-low, and simmer for 20 minutes or until rice is done, stirring once toward the end to prevent sticking.

Remove from the heat and stir in the parsley. Serve immediately and enjoy!

Notes

1. Add more sausage if you like the meal to have more meat. --- 2. This recipe calls for jasmine rice, but any other type of white rice will work as well. --- 3. If you don't like pinto beans, feel free to add a different type of beans like black beans, or white kidney beans. --- 4. Make sure when you cover the pan to let the rice cook, to not open the lid. If you feel it will burn, turn the stove top down a bit. Rice cooks better when undisturbed. --- 5. If you want less sodium in your dish, feel free to us a low sodium chicken broth. It will taste just as delicious! Also, chicken boullion cubes work just the same as chicken broth from a can or container.
