The salmon falls apart like butter and we packed up a yummy corn tortilla with the meat, some cilantro and onion, and our avocado chili salsa which is incredible! The tacos are so juicy and flavorful, and I most definitely had more than just 2 tacos! Dare I say 4??? The salmon really has such a wonderful taste and does not taste fishy at all! • 1/2 tsp dried oregano
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper
  • 1 TBLS olive oil
  • 2 cloves garlic, minced
  • Small corn or flour tortillas
  • Salsa
  • Onions
  • Cilantro

Instructions

1

Preheat the oven to 450°F.

2

Line a baking sheet with aluminum foil or grease with cooking spray and set aside.

3

Whisk together the chili powder, cumin, oregano, salt and black pepper together in a small bowl until combined.

4

Lightly pat the salmon filet dry with paper towels.

5

Brush both sides with oil, and sprinkle evenly with the seasoning mixture.

6

Bake until the internal temperature of the salmon reaches 135-145°F.

7

Once the salmon is cooked, use a fork to roughly shred it into large pieces.

8

Add the salmon to your tortillas, top with a few spoonfuls of salsa, cilantro and onions and enjoy!

Notes

1. The filet should cook for bout 4-6 minutes per half inch of thickness (measured by the thickest part of the filet). You can also test for doneness by inserting a fork or knife in the salmon and twisting it a bit; the fish should be opaque and flake easily. --- 2. The FDA recommends cooking salmon to an internal temperature of 145°F, measured in the thickest part of the salmon filets. --- 3. The salmon will continue to cook a bit more once it has been removed from the oven, so we like to pull ours out around 140°. --- 4. If your salmon has skin on the bottom of the meat, feel free to peal or cut it off and discard. --- 5. We like to use fresh salmon. You are welcome to use frozen salmon filets, just let it defrost completely before seasoning and cooking. --- 6. If you would prefer to grill the salmon, just follow the same instructions as above just sub using a grill instead of the oven!
